THE OLIVE OIL MAKING
Hand harvest and processing within 24 hours. Removal of leaves and debris, washing and transfer in the disk mill.
Grinding in controlled atmosphere, extraction and decanting in three phases.
THE MILL
The mill is equipped with the three phases Alfa-Laval® centrifuge (marc-water-oil). Stainless steel storage tank. Plate filter.
TERROIR
Clay shist (70 %) sandstone and marl.
Organic certification. Pruning every 2 years.
